Japanese Miso Ramen at Home
Ingredients
- 2 portions ramen noodles
- 2 eggs
- 1 tbsp sesame oil
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 litre chicken or vegetable stock
- 2 tbsp white miso paste
- 1 tbsp soy sauce
- 100 g mushrooms, sliced
- 2 spring onions, sliced
- 1 sheet nori, cut into strips
Instructions
- Boil the eggs for 6 1/2 minutes, cool them in cold water, and peel.
- Heat the sesame oil, then soften the garlic and ginger for 1 minute.
- Add the mushrooms and cook for 3 minutes.
- Pour in the stock and simmer for 10 minutes, then whisk in the miso and soy sauce off the boil.
- Cook the noodles separately according to the packet, then divide them between two bowls.
- Pour over the broth and top with the halved eggs, spring onions, and nori.
Notes
Never boil miso — high heat kills its flavour. Add it at the end, off the heat.
