Meal prep fails when you cook five identical meals and get bored by Wednesday. The fix is to prepare components instead: a grain, a protein, a roasted vegetable, and two sauces.

The 90-minute Sunday

Start a pot of grains, roast a tray of vegetables, cook a batch of protein, and mix two sauces. Ninety minutes gives you roughly twelve combinations across the week.

What keeps and what does not

Grains, roasted vegetables, and cooked proteins keep three to four days in the fridge. Dressed salads and cut avocado do not — keep dressings separate and add them at the table.
