First pass: the shape of the dish
Look at the total time, the equipment, and the number of steps. Decide whether it fits the evening you actually have.
Second pass: the details
Note temperatures, resting times, and the words that matter: dice, fold, simmer, rest. Preheat the oven when the recipe says to, not when you remember.
Prep before you cook
Chop, measure, and lay everything out first. Cooking goes twice as smoothly when nothing is being decided under heat.
Where you can improvise — and where you cannot
Swap vegetables freely. Do not change the ratios in baking, and do not skip salt in pasta water or sugar in a sauce; they are structural, not decorative.
